Steamed Radishes

Steamed Radishes

For the life of me I can't remember where I found this recipe.
I like to give credit whenever possible, but this one just escapes me.

Brennan chose radishes one day at the grocery store and I served them in a salad.
The boys liked them "ok" but weren't crazy about the "spicy-ness".
I heard about steaming radishes to bring out an almost sweet side.
They were much more popular served steamed.

Once washed and trimmed, I place the radishes in my microwaveable steamer and cover with water.

I use this Pampered Chef version that I've had for 12+ years.  It is perfect for steaming vegetables.
 After 7 minutes in the microwave, I drain the radishes (the water is dark purple!) and season with a little butter and salt.
They're best served immediately.

Radishes are super healthy so I am always happy to serve them when the boys pick them out.
While maybe not my favorite vegetable, they're tasty steamed and a quick side dish.

Red Beans and Rice

Red Beans and Rice

More than a fancy meal involving numerous ingredients, my family likes simple food. 
This dish is one of those that is very popular and is very easy to make.
Win/win!

I have modified this recipe from several others I found on allrecipes.com (my favorite go-to recipe site).
Unlike some rice dishes, this one is good heated up the next day for left-overs.
Or in Brennan's case as an after-school/pre-swimming snack last week.

I use turkey kielbasa, along with kidney beans, pureed tomatoes and seasonings.
Served over rice - it's a great meal all by itself.

Mayonnaise Alternative

Real Simple Mayonnaise Alternative

Have I lost you already with the word "alternative"? 
I typically like to eat the real thing - or maybe the light version.
But when I saw this mayo option in Real Simple magazine, I decided to give it a try.
And I really liked it, so I'm sharing it here.

I like mayo on my sandwich but I know how high in fat and generally unhealthy it is.
I wish I liked mustard only, but that's not me.

This version uses Greek yogurt and spicy mustard and works beautifully on a sandwich, with no guilt!

A Tasty Fake!


Coconut Bars

Mississippi Magazine Coconut Bars

I found this recipe in Mississippi Magazine (which has the best recipes) last fall and made them at Christmas.
I loved them and gave several batches away.



You make them in one step in the mixing bowl and bake in a 9x13 pan.
Once cool you can cut them as bars or shapes.

So easy, moist, and subtle. 
Not too overwhelmingly coconut.

I have two coconut lovers at home who will really enjoy having these after school one day soon.

Roasted Potatoes

Easy Roasted Potatoes

This is a super easy side dish that everyone loves.
There's really not even a point to measuring the ingredients precisely.
Quarter red potatoes and toss with olive oil, Kosher salt, and pepper.
You don't need a ton of olive oil - a little goes a long way.
My family likes the texture of Kosher salt (or sea salt) vs. table salt in this recipe.

Then toss onto your baking sheet and cook at 375* for 30 minutes.
When the potatoes look roasted and you can pierce them with a fork, they're done!
