Veggie Pizza

Veggie Pizza
This is a great appetizer that is one of Thomas's favorites.
It's not something I would make for dinner and I don't make it often, but Thomas asks often.
We were all going to a party Saturday so it was a great opportunity to recruit some child labor helpers and make Veggie Pizza to take.

You start by unrolling 2 tubes of crescent rolls onto a baking stone or sheet, pinching the seams together and pricking it with a fork.

While the crust is baking, you mix together cream cheese, dry ranch dressing and mayo.

Once the crust is completely cool you spread the cream cheese mixture on.

Then you top with your favorite vegetables. 
We usually do chopped baby carrots, broccoli, and sliced black olives.

Recruit your little brother to help and try not to smile.

A lot of people sprinkle shredded cheese on top. 
I usually omit the cheese.  It's decadent enough without it.
I slice it into about 24 squares and put on a serving plate.

It's always a hit!

Caprese Salad

Caprese Salad

This is my very favorite salad.
It's simple, delicious, and it just might tempt my boys to finally eat a tomato one day.
They're great eaters overall so I let them pick 2 things that I will never "make" them eat.
Tomato is on both of their lists.

But this dish just might be the trick because they seem to want to try it each time I make it.

It's the national salad of Italy - with the colors of the flag.


Whole mozzarella is a must. 
I saw this served one time with deli mozzarella slices.
Please, splurge and get whole mozzarella for this dish.

Slice, layer, and drizzle with good Balsamic vinegar.

Seasoned Fish

Seasoned Fish

This is the easiest recipe I could possibly share.
I always keep frozen tilapia or flounder on hand because the family loves fish and it's easy to cook on a busy night.

This is the healthiest way I cook fish, and a very tasty alternative to my yummy Parmesan Tilapia.

Two ingredients:  fish of your choice and McCormick's Grill Mates Montreal Steak.
It's not just for steak anymore!

Heads up:  While David and I really liked it as shown above, the boys thought it was a little salty. 
I might use a little less on the boys' next time.

Mint Chocolate Chip Cookies

Mint Chocolate Chip Cookies

I don't bake a whole lot, but I do like to have a few easy recipes on hand.
These cookies were a big hit earlier this year at a party.
3 dozen disappearing pretty quickly!
And they couldn't be simpler.

You mix all ingredients and then add in creme de menthe chips and chocolate chunks.


Then place the dough balls on a cookie sheet and cook at 350* for 9 minutes.

They are great served warm with ice cream.
And are perfect for St. Patrick's Day parties!

Black Bean Enchiladas

Black Bean Enchiladas

This is my family's favorite supper. 
Whenever I ask for supper requests one of my three boys will ask for black bean enchiladas. 
I feel like I make it too often, but it's a winner every time.

It's a winner for me too because this dish is fast, pretty healthy, and only requires 4 ingredients.
Awesome!



While I like traditional enchiladas like the Chicken Enchiladas I shared recently, layered enchiladas are even easier.  And just as delicious.

First I pour a little bit of the enchilada sauce into the casserole dish. 

Then I lay down my first 3 tortillas.  I tear one in half to fill up the casserole nicely.

Then 3 layers: 3 tortillas, beans, sauce, and cheese.

The top layer is tortillas, sauce and cheese.
At this point you can cover it and keep in the fridge until you're ready to cook (which is what I normally do), or pop it in the oven.

30 minutes at 350*.
I cut it like lasagna and serve squares with a salad.
