Blended Mango Salad Smoothie


I saw this recipe in the book Eat to Live and thought it sounded like a great way to get some extra greens in, assuming it was tasty.

This is a great smoothie (or "blended salad" as Dr. Fuhrman calls it)!

We loved the texture, and it's actually pretty sweet.
I've made it a couple of times now - it's a great time of year when mangoes are plentiful and inexpensive!
I peeled and sliced up a mango and added it to the blender, along with 1 cup of chopped kale.
I blended it well, then added half of the romaine, and blended again.

Then I added 1/4 c of milk or milk alternative (almond milk, or soy milk, or rice milk...) and the rest of the romaine and blended it one final time.


It's thick and sweet, and really good.
I would recommend chilling it in the glass or the blender for a few minutes though - it tastes especially good cold.

Spinach Smoothie

I don't remember where I picked up this recipe, I think from a book club friend who is already very healthy, but is eating a lot more vegetables these days.

There are so many great smoothie recipes out there but I don't like the high-calorie ones because I'm always hungry again after drinking a smoothie.

If I'm going to have a smoothie in the morning, it's got to be nutrient packed and low-cal so I can happily eat again in a couple of hours.

This recipe is very simple and only has 3 ingredients, although you could add anything to it that you wanted.  That's the beauty of a smoothie.  If you want it to be thicker, then add ice cubes.

You simply blend 2 very large handfuls of fresh spinach, 1/2 a large cucumber (or a whole small cucumber), and 3/4 c no-sugar-added juice.


It's really delicious (even though I'm sure you don't believe me) and it's 3 huge servings of green vegetables!

If you want to make it even sweeter, add peeled apple slices to the blender.

Strawberry Soup/Smoothie

Yes, another recipe from my latest cookbook!
I was intrigued by this recipe - Strawberry Soup - and Thomas asked me to try it so I did yesterday for our afternoon snack.

In a blender you simply puree thawed frozen strawberries, lime juice, Greek yogurt and honey.


And while the boys enjoyed it as a "soup" - 

 - we all agreed it would be perfect as a smoothie.

It is rich like a strawberry shake and filling!

I pinned this smoothie on Pinterest and decided to try it out this morning.


I had never made a smoothie with water before so was eager to try it out.

Brennan wanted to try it too.
I'm sure I made a face much like his at first.



It was actually good.  It's something I would drink on a regular basis.


I read the reviews and it said that you have to overpulse it so that it is good and smooth.
After running this on the normal smoothie setting, I then hit High Pulse for a few seconds.

Worked great!
