Peeps Cake

Peeps Cake from Cake Central

I saw this Easter cake on Pinterest and decided to make it for Easter!
The cake comes from Kayleesgrammy on Cake Central.

I made a Duncan Hines Orange Supreme cake and frosted it with Classic White frosting.
Decorated with Bunny Peeps, and topped with Easter M-n-M's.

I made the mistake of frosting and covering my cake the night before I decorated.
Then the Bunnies wouldn't adhere.
I recommend decorating with the Bunnies immediately after frosting.
I ended up purchasing another tub of frosting to stick the Bunnies on.
It worked fine!

Waaaay too sweet for me, but the kids at our Easter dinner liked it!

I had never tried the Orange Supreme cake mix before - it was good.
I think it would be good with crushed pineapple.

Valentine Chex Mix

Valentine Chex Mix

I adapted this recipe for a Valentines theme from an old recipe I had.
My boys loved it, and the ladies who came to my birthday party did as well.
It would be perfect for any holiday, just changing up the colors.

I started by melting peanut butter, margarine and white baking chips together, then mixing it together with Rice Chex cereal.  Stir carefully so the cereal doesn't crush and crumble.

Then I transferred about 1/2 of the cereal mixture to a large Ziploc bag and add powdered sugar.  I tossed it around to coat well.
Optional:  For more Valentines color, you can add red, white, and pink sprinkles when you toss it together.

I mixed the other half of the cereal mixture with Valentines M-n-M's.

Then I laid both mixtures out to cool for half an hour or so.

Then combine and store in an airtight container until you're ready to serve!

Bourbon Balls

Lora's Bourbon Balls

We attended John's 50th birthday party a few weeks ago, and our friends Lora and Rob presented him with the most delicious Bourbon Balls.  As you can tell from his birthday present pile, Bourbon Balls were a perfect idea.

Lora happily shared her recipe with me and I made some for Christmas.
I believe I have two brothers-in-law who might enjoy them.

I liked 3 things about this recipe.  First - they weren't covered in powdered sugar that get all over the clothes.  Second - I had all the ingredients on hand except the Vanilla Wafers.  And C - simple & delicious!

You crush a box of Nilla Wafers and a cup of pecans.
I did this in the blender and it worked well.

Then you add in other ingredients, including Makers Mark bourbon.

Roll them into balls.  This recipe makes 4 dozen.

Then roll those into granulated sugar.

Resist the urge to taste any more than one and pop in an air-tight container for 3 days before serving or sharing.

Christmas Cake

Mama's Christmas Cake

This is a cake that my mom has made many times over the years.
I was pleased to learn that it wasn't that hard to assemble, and it makes quite an impression.
I made it for my international cooking club a couple of years ago and they were thrilled to learn to make something so unique for the holidays!

I served it at our Wine Club dinner Sunday night, and I got several "oohs" and "it's lovely!".

Start by laying a piece of wax paper on a 15x10 pan and then spraying Pam on the wax paper.
Sift flour, baking powder and salt together.

In the mixer beat eggs until thick, then add sugar and beat on high for 5 minutes until thick and creamy.  Add orange juice and combine, then add in flour mixture.

Pour the batter into the pan and spread evenly.  Bake at 375 for 12 minutes.

Lay a clean dish towel on the countertop and sprinkle it with confectioner's sugar.
Remove the pan from the oven and invert it onto the towel.

Remove the wax paper and cut off 1/4 inch around all sides of the cake.
Feed the "cake strips" to your hungry helper.

Roll up the cake and towel and allow to cool completely.

Drain the cherries well.
Combine heavy cream and confectioner's sugar in a mixer and beat on high until thick and creamy.  Stir in vanilla.

Unroll the cake and spread half the whipped cream onto the cake and all but 3 of the cherries.
Twice I've forgotten to hold back 3 cherries and kicked myself.
Note: You'll notice I didn't spread half the whipped cream on the cake because I was afraid I wouldn't have enough leftover to frost the cake. Fear not! You'll have plenty, so use 1/2!

Then roll the cake back up and place, seam down, on your serving platter.

Then frost with remaining whipped cream and garnish with the remaining 3 cherries and holly leaves from your front yard :)

Caramel Halloween Mix

Life is Just a Bowl of Cherrys'
Caramel Halloween Mix

I found this delicious Halloween snack on Life is Just a Bowl of Cherry's blog.

I made it for our Halloween Costume Party over the weekend.
This recipe makes a lot and it's perfect for kids.
I put black cups out so it would be easy to scoop up and snack on as people were mingling.

I modified the recipe slightly.

Pumpkin Pie Dip

Slice & Dice's Pumpkin Pie Dip

For our Halloween Costume Party over the weekend I took three new dishes that I'm excited to share with you.
This one received lots of compliments.  I was so glad it went over well.
I made a batch for the boys and their friend and our sitter to enjoy as well.
There were raves.

I think it's a great Fall/Halloween/Thanksgiving dessert or snack!

I found the recipe on Slice & Dice's blog.  You can find it here.

It's super easy and tastes delicious - a lot like pumpkin pie!
I served it with pretzel rods and Teddy Grahams but will try gingersnaps and apples next time.

It makes a lot so you can easily half the recipe.

Acorn Treats

Acorn Treats

Aren't these the cutest little cookie treats?
David and the boys loved them last night.

Super easy to make and perfect for Fall or Thanksgiving.
I'm making a batch to take to a school program tomorrow as well.

Using mini Nutter Butter cookies, Hershey's kisses, chocolate chips and chocolate frosting, you can whip up a batch in no time.

Thanksgiving Pilgrim Hat Treats

Pilgrim Hat Treats
So easy, the kids can make them.
Great for Thanksgiving parties or dinner.
Way too much sugar for (most) adults, but the kids will love them!

Turn Fudge Striped cookies upside down.
Mix up yellow frosting by adding food coloring to regular frosting.
Smear frosting on top of a mini peanut butter cup and turn upside down onto the cookie.
Top with a "buckle" using either a Tic Tac or a Chicklet.

Halloween Witches Hat Treats

Witches Hat Treats

This is a spin-off of the popular Thanksgiving Pilgrim Hat Treats that were so popular a couple of years ago.  I'll share those later this week.

Like those treats, these are so easy that even the kids can make them.
Way too much sugar for most adults but they're great for a kids Halloween party!

Mix yellow and red food coloring into normal frosting.
Flip the cookies upside down, spread frosting on a Hershey's kiss, and assemble!
