Chicken Poppy Seed Casserole

Misty's Chicken Poppy Seed Casserole


This is my cousin Bradley with his beautiful wife Misty, son Noah, and daughter Ava-Grace (who I am dying to meet at Christmas!)

Last Christmas Misty made this delicious casserole and we all loved it.
Misty was surprised I hadn't had it before - it's a variation on the chicken and soup casseroles that are so popular in the South.  Great for a big group gathering.  And delicious!

I baked my chicken breasts by seasoning them with salt & pepper and cooking at 350 for about 30 minutes.  Then I shred them in my trusty big blue bowl and mixed in soups and sour cream. 

Then I spread it in a baking dish and covered with poppy seeds.
This is 3 good pinches of poppy seeds.  I will probably go to 5 next time because I liked the flavor.

*Note to self - you now have 3 jars of poppy seeds.  Stop buying them thinking you don't have any.*

Then I crushed a sleeze of Ritz crackers and Thomas melted a stick of butter and drizzled it over the top before baking at 375* for 45 minutes.

I served it over rice and it was delicious.
I knew David would love it, and he did.


This makes a very creamy dish. 
You could add more chicken or cut back on the soups if you want it less creamy.
